Rajasthani Kachori Recipe – Green Chana Kachori – Kachori is supposed to have originated in Uttar Pradesh or Rajasthan. In these states it is usually a round flattened ball made of fine flour filled with a stuffing.

Ingredients

250 gm – Green Chana (Gram)
15 gm – saunf (Fennel)
250 ml- Peanut oil
500 Gm – Maida
1/2 lt – Mattha (Buttermilk)
salt and Red Chilli powder according to taste

Instructions

1. Grind Green Chana (Gram).
2. Heat oil in kadai.
3. Roast Green Chana (Gram) paste with saunf (Fennel),
salt and Red Chilli powder in kadai properly and remove from flame.
4. Knead (goomdhanaa) Maida moyan with oil using Mattha (Buttermilk).
5. Make balls from the Maida and roll these into a circle.
6. Now fill circle with paste and make Kachori.
7. Fry in hot flame and serve.
